What do i do if i have received multiple acceptance letters from various colleges? What are some of the things i should considered in order to narrow down to maybe 2 universities?

It's always nice to talk to family members to figure out and weigh out your options. I wouldn't wait too long before making the final decision though. Be considerate of other candidates who are on the waiting list.

I'm interested to know if you've gotten multiple acceptance from various colleges and you've committed to one and declined all the others, but later on you've changed your mind and wanted to attend one of the other schools. Is it too late to undo everything and attend this other school?

No. It's not too late to undo, but you will have to do everything in writing and inform each college asap to avoid further complications.
